it takes a village

Three years ago, when my beautiful grandmother passed away, I created a cookbook in her memory. It was a true labor of love. I cried at least 50 times making it and it's my absolute favorite book in the world.
Fast forward to 2020 and the height of the global pandemic. I left my corporate job to take care of my son and needed a feel-good project to get me through a very cold and dark winter.
I worked with our local PTSA, chefs, restaurants, professional photographers, farmer's market vendors, school administrators, teachers, students and the residents of our entire village to produce a 200 page cookbook. Food really does highlight the diversity, traditions and cultures that we all hold so dearly.
This beautiful cover photo was taken by chef Kate Sonders Solomon. Hastings on Hudson is a village, incorporated since 1879, and my personal favorite fact - the home of The Good Witch of Oz, Billie Burke. This movie has a particular place in my heart, not only because of The Burke Estate in Hastings or the love the village has for her, but my grandmother was a carbon copy of a young Judy Garland from The Wizard of Oz!
Below is her recipe from the book, Chicken Squares. All of her recipes from the 1940's on were influenced from the WWII era, living in the south and her natural ability to create a wonderful home.
